Create New Item Type When Splitting Packages
Would it be possible to add an option to change the item type when splitting into a new package?

You should be able to change the item type. The tool will auto-select the same item for you, but click the X to remove the autopicked item:
And then select a new item:

Also is it possible to split into multiple item types from the same source package?

It's not currently possible. I don't think that would work well with the split tool, the interface would get so complicated that I'd basically be rebuilding Metrc.
Instead, I'm planning on creating a Create Package from CSV tool as part of the T3+ offering. You could configure the rows however you want (multiple items, multiple sources, etc), and the tool will fire them off to Metrc all at once.
